Cuesta de las Liebres is a wine that confirms the identity of this land, located above the Carraovejas valley. The Tinto Fino (Tempranillo) vines are grown in vineyards surrounded by pine forest and Mediterranean scrub. This wine is produced only in exceptional harvests, expressing the essence of the limestone and marly soils of this parcel. The grapes are harvested by hand and carefully selected in the vineyard, before being transported in small boxes to the cellar. After passing through a cooling chamber and a double selection on the table, the must is transferred by gravity into small wooden tanks. The fermentations, both alcoholic and malolactic, take place spontaneously in these vats, followed by a 24-month refinement in new 225-litre French oak barriques. Cuesta de las Liebres has a deep ruby red color. On the nose you can perceive complex aromas of ripe red fruits, sweet spices, earthy notes and a light touch of vanilla. On the palate it is powerful and well structured, with robust tannins and a long, persistent finish. This wine pairs perfectly with red meat dishes, game or mature cheeses.
