Vinification of the Charta Riesling from Allendorf The basis for the balanced Charta Riesling from the Rheingau is grapes of the Riesling variety. After the grape harvest, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks and large wooden casks at controlled temperatures. Vinification is followed by maturation for several months on the fine lees before the wine is finally bottled.
