After being harvested by hand when perfectly ripe between the end of September and the beginning of October, the grapes macerate and ferment at a controlled temperature for 10 to 12 days. The must is then transferred to concrete tanks where malolactic fermentation takes place. The wine is then matured in French oak barriques for 12 months, followed by several months of ageing in the bottle.
