What kind of wine is itVerona Rosso di Dal Moro is a full-bodied red wine produced in the province of Verona from Merlot, Syrah, and Corvina Veronese grapes. The winemaking process involves controlled temperature fermentation in stainless steel and aging in oak barrels with a small portion in barriques, elements that help to define an elegant and decisive profile.Where it comes fromThe grapes come from vineyards located in the Valpolicella Classica area, between Novare di Negrar and the Val d’Illasi, east of Verona. The area offers a temperate climate with marked temperature variations and morainic soils rich in galestro and calcareous marl. Altitudes between 200 and 350 meters encourage slow ripening, enhancing the wine’s aromatic concentration and tannic structure.How it is madeThe Merlot and Syrah are harvested in mid-September, followed by alcoholic fermentation in stainless steel and malolactic fermentation. In October, the Corvina Veronese is harvested and placed in a drying room for partial drying, then vinified with extended maceration. After phenolic extraction, the wine ages in oak barrels and partly in barriques. After six or seven months, the varieties are blended and the wine rests further in bottle, resulting in a profile of balance and depth.Tasting notesIn the glass, it displays a deep ruby red color with purple highlights. The nose reveals aromas of red fruit jam, morello cherry, and dried rose, enriched by notes of black pepper and tobacco. The palate is enveloping and warm, with soft tannins and balanced savoriness. The finish is persistent, with fruity and spicy returns, leaving a sensation of fullness.Food pairingsThis wine pairs well with beef carpaccio with extra virgin olive oil and Parmesan shavings, first courses such as tagliatelle with wild boar ragout, and game dishes. Among cheeses, it matches with medium-aged Pecorino and Monte Veronese.
