The grapes grow under optimal conditions on the Mosel. Here, the vines dig their roots deep into soils of limestone and slate. At the time of optimal ripeness, the grapes for Riesling By the Glass are harvested exclusively by hand without the help of coarse and less selective grape harvesters. After the hand harvest, the grapes quickly reach the winery. Here they are sorted and carefully crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. At the end of fermentation, the Riesling By the Glass is allowed to further harmonize on the fine lees for several months.
