Castelfeder's Pinot Noir Riserva Burgum Novum is a wine that expresses the authenticity and roots of the Alto Adige territory. The name comes from the Latin Neumarkt , the village where the winery is located. This Pinot Noir grows on clayey soils rich in minerals. The alcoholic fermentation takes place in steel tanks, followed by an 18-month maturation in barrique, during which the malolactic fermentation takes place. Subsequently, the wine ages for 12 months in steel and a further 6 months in the bottle. This wine has a ruby red color tending towards garnet. On the nose it offers a broad and fruity aroma, with notes reminiscent of blackberries, raspberries and chocolate. In the mouth, Burgum Novum stands out for its balance and complexity, with a long and enveloping finish. Pinot Noir Riserva Burgum Novum pairs perfectly with red meats, game and mature cheeses.
