The Bolgheri Superiore Sondraia from Poggio al Tesoro, a winery by Marilisa Allegrini, originates from vineyards that extend along via Bolgherese and via Le Sondraie, in the heart of the renowned Bolgheri DOC. It is produced mainly with Cabernet Sauvignon grapes and with Merlot and Cabernet Franc grapes, harvested exclusively by hand in the second half of September.Fermentation takes place in stainless steel tanks at a controlled temperature of 28-30°C for a duration of 12 days. After malolactic fermentation in barriques at a temperature of 22°C, the wine ages for 18 months in French Allier oak barriques, partly new.Ruby red in color, it opens on the nose with a complex bouquet of aromatic herbs, enriched by decisive fruity notes of blackberry, cherry, and plum. On the palate, it reveals a fresh balsamic trace that offers a fresh, harmonious, and silky sip.Perfect paired with grilled meats, including Chianina, and spit-roasts and roasts, this Bolgheri red is a great match for medium-aged cheeses and smoked ricotta.
