Sauvignon Blanc Mühlhofen Ortswein Reserve Bietighöfer

Like many of the wines from Bietighöfer, the Sauvignon Blanc Réserve does not require any corrective interventions in the cellar that appear superfluous. Hand picking, no primary clarification, spontaneous fermentation in the 500l tonneau of the Tonnellerie Sylvain from Pomerol. Here it matures on the full yeast until it is fully fermented. This gives it a multi-faceted potpourri of flavors. In the nose, hints of fine herbs, followed by flint, ripe gooseberries, lemon peel and delicate smoky minerality. A still youthful wine that already has a lot to offer.
