94-96/100 PP The 2010 Nuits St. Georges Les Cailles comes across as cool, mineral infused and a bit reticent. With time in the glass the aromas and flavors begin to take shape. The Cailles remains a firm, structured Nuits that will require considerable patience, but its expressive fruit and gorgeous inner perfume bode very well for the future. Menthol, graphite, spices, tar and licorice wrap around the persistent, saline finish. Anticipated maturity: 2020-2035. (Antonio Galloni, robertparker.com) Our domain has been historically deeply attached to growing vines for 4 generations. We have the privilege of working a world-renowned terroir. Our expertise has its roots in tradition, but is also inspired by modern methods, pushing us naturally towards creating fine wines. The domain covers an area of 13 hectares of vines, mostly red Premier Crus (8). Guyot pruning is used. The final result is structured, fruity, elegant, fine and complex wines, made to be kept. (Domaine Robert Chevillon) Les Cailles has a luminous and fairly sustained colour. From its youth, charm, freshness and fruitiness seduce us. A mixture of fresh fruit with a hint of vanilla, a touch of wild cherry, rosewood and old rose. These mingle with fine liquorice and spicy scents. Throughout the vintages, Les Cailles maintains a constant profile in which volume, airy fullness, silky texture dominate in the mouth, enhanced by freshness. (Domaine Robert Chevillon)
