Vinification of Prestige Sauvignon DOC from San Simone The grapes for this wine come from carefully tended sites in Friuli-Venezia Giulia. The climate there is marked by cool nights and warm days. This allows the Sauvignon Blanc grapes to ripen slowly and evenly. The influence of the nearby Adriatic brings mild winds that keep the vines dry and support clear fruit expression. The soils consist of sandy and loamy layers with mineral-rich components. This gives the wines tension and a noticeable, fine minerality. In the vineyard, the focus lies on gentle cultivation.
