Vinification of the Orvieto Secco by Sergio Mottura The basis for the first-class and wonderfully balanced Orvieto Secco cuvée from Sergio Mottura is Grechetto and Trebbiano grapes. In Lazio, the vines that produce the grapes for this wine grow on soils of volcanic rock. After being hand-harvested, the grapes are brought to the winery as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. Vinification is followed by several months of aging on the fine lees before the wine is finally bottled. It is perfect as an accompanying wine with spinach gratin with almonds, omelet with salmon and fennel, or cod with cucumber-mustard vegetables.
