Vinification of Barbaresco from Prunotto The basis for this balanced Barbaresco from Piedmont is grapes from the Nebbiolo grape variety. In Piedmont, the vines that produce the grapes for this wine grow on marl soils. Naturally, Barbaresco is also determined by the climate and the Barbaresco DOCG winegrowing style. This Italian wine can literally be described as a wine of the Old World, which presents itself with exceptional elegance. The ripening of the grapes for this Nebbiolo wine is influenced to a very large extent by the climate of the growing region. In Piedmont, the grapes thrive in a rather cool climate, which is reflected in particularly long and even grapes and a rather moderate must weight. The grapes for this red wine from Italy are harvested exclusively by hand when they are perfectly ripe. After the grape harvest, the grapes are transported to the winery as quickly as possible. Here they are sorted and carefully broken up. Fermentation then takes place in small wooden vats at controlled temperatures. At the end of fermentation, the Barbaresco is aged for 24 months in oak barrels. The ageing in oak barrels is followed by extensive bottle ageing, which makes this red wine even more complex.
