Vinification of the Golan Heights Yarden Sauvignon Blanc The vineyards for the Sauvignon Blanc grapes are located in the cool north of the Golan Heights. After the grapes are harvested, they are immediately taken to the winery. There the must is fermented classically in stainless steel tanks. Only a small percentage is aged in oak barrels to give this wine complexity and volume. The remaining white wine rounds off harmoniously in stainless steel tanks.
