Vinification of the Escarpment Pinot Noir by Escarpment Winery This well-balanced red wine from New Zealand is made from the Pinot Noir grape variety. After the harvest, the grapes are quickly brought to the winery. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before being finally bottled.
