Die Assemblage der Champagne Bollinger SPECIAL CUVÉE besteht hauptsächlich aus Pinot Noir (60%), Chardonnay (25%) und Pinot Meunier (15%). Das Traubengut stammt zu 80% aus Grand- und Premier Cru-Lagen der Champagne. Der Ausbau findet teilweise im Eichenfaß und teilweise im Edelstahltank statt. Die Champagne Bollinger Special Cuvée reift mindestens 3 Jahre auf der Hefe, also viel länger als es die Regeln der Appellation (15 Monate) vorschreiben. Die lange Reifung fördert die Entfaltung der Aromen und unterstützt die Geschmacksfülle der Weine. Die Champagne Bollinger Special Cuvée ist eine großartige Mischung aus Körper, Harmonie, Weinigkeit und Eleganz, sie ist besonders charakteristisch für den „Stil Bollinger“. Die Besonderheit liegt im Ausbau in französischen Barriques, nicht im Stahltank. Diese Ausbaumethode beherrschen nur zwei weitere Champagnerhäuser: Krug und Moet & Chandon beim Dom Perignon. Auszeichnungen: Wine Spectator 94 Punkte: A rich, smoky Champagne, with hints of marzipan and fennel seed accenting honeyed malt, bread dough, baked apple and gingersnap flavors. It's all focused by intense acidity, which meshes beautifully into the layers of flavor and refined texture, with a lingering finish. Drink now through 2021. 8,000 cases imported. The NV Brut Special Cuvee is fabulous. Hints of pears, pastry crust and hazelnut lead to an expansive core of fruit. There is plenty of the signature Bollinger oxidative style in this rich, enveloping Champagne. Once again the Special Cuvee is one of the best Champagnes in its price range. This is Lot L114501. The Special Cuvee is typically one of my favorite wines in its price range, but it is the 2004 Rose La Grande Annee that steals the show this year. Bollinger is unique among Champagne houses in that the reserve wines are all bottled in magnum and with natural cork, a huge, labor-intensive effort.
