Vinification of the Catena Zapata Cabernet Sauvignon Once the hand-picked harvest arrives at the winery, the grapes are first subjected to cold maceration for 3 days. Then fermentation takes place in stainless steel tanks for a total of 20 days - secondary fermentation is 20 to 23 days. Finally, this red wine is aged in French oak barrels for 12 to 14 months.
