These are joined by hints of basil, pepper and toasted wood. On the palate, Sassotondo’s Ciliegiolo Maremma Monte Calvo opens pleasantly dry, firm and aromatic. On the tongue, this powerful red wine is characterized by an incredibly velvety, dense and meaty texture. The finish of this red wine from the Tuscan wine-growing region ultimately convinces with a beautiful aftertaste. The finish is also accompanied by mineral notes deriving from the volcanic rock–dominated soils. Vinification of Sassotondo Ciliegiolo Maremma Monte Calvo This red wine clearly focuses on a single grape variety, namely Ciliegiolo. For this wonderfully powerful varietal wine from Sassotondo, only immaculate grapes were used. In Tuscany, the vines that yield the grapes for this wine grow on soils of volcanic rock. After the harvest, the grapes are quickly brought to the winery, where they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks and large wooden vats at controlled temperatures. Fermentation is followed by 12 months of aging in oak barrels.
