Vinification of Gerard Bertrand Heritage 560 Tautavel The basis for the powerful Heritage 560 Tautavel from the Languedoc consists of grapes from the Carignan, Grenache and Syrah varieties. After the harvest, the grapes are brought to the winery as quickly as possible. There they are selected and gently crushed. This is followed by fermentation in large wooden vats at controlled temperatures. After the end of fermentation, the Heritage 560 Tautavel is matured for several months in French oak barrels. It is perfectly suited as a companion to boiled fillet of veal with beans and tomatoes, duck breast with sugar snap peas or fried calf’s liver with apples, onions and balsamic sauce.
