Vinification of Montes Montes Twins Red Blend The basis for the powerful Montes Twins Red Blend from Valle Central is grapes from the Cabernet Sauvignon, Carmenère, Shiraz, and Tempranillo varieties. When perfectly ripe, the grapes for the Montes Twins Red Blend are harvested exclusively by hand, without the aid of coarse, less selective machinery. After harvesting, the grapes are immediately taken to the press house. There they are sorted and gently crushed. Fermentation then takes place in stainless steel tanks and small oak barrels at controlled temperatures. After fermentation is complete, the Montes Twins Red Blend is matured for another 12 months in French oak barrels.
