Vinification of Donnas from Cave De Donnas This powerful red wine from Italy is vinified from the grape varieties Fumin and Nebbiolo. After harvesting, the grapes are brought to the winery without delay. There they are selected and gently crushed. Fermentation then takes place in stainless steel tanks and large wooden casks at controlled temperatures. After the end of fermentation, the Donnas is allowed to further harmonize on the fine lees for 20 months. It is a perfect companion to ossobuco, fried calf’s liver with apples, onions and balsamic sauce, or boiled veal topside with beans and tomatoes.
