Steep slate slopes, little rainfall and hot summers shape the region. The vines root deep in the barren, stony soil. This concentrates a lot of aroma in the grapes while yields remain low. The proximity of the Douro River provides some cooling at night. As a result, a fresh acidity is preserved in the grapes, which later enlivens the Port. As soon as the desired sugar level is reached, the winemaker stops fermentation by adding high-quality wine spirit. This preserves a natural sweetness in the wine while the alcohol content rises.
