Production of the Terroir Series Cabernet Sauvignon / Malbec / Petit Verdot from Bodega Kaiken The grapes for this Terroir Series come from selected sites in Mendoza, one of Argentina’s most renowned wine regions. The continental climate with high sunshine and a marked cooling during the night produces concentrated, aromatic berries. The vines grow at higher altitudes with good air circulation. The soils mostly consist of gravel, sand and stony scree, often with limestone content. This combination leads to low yields and dense, flavor-intense grapes. Cabernet Sauvignon provides the backbone of the cuvée. The thick-skinned berries bring firm tannins, deep color and the typical cassis note. Malbec appears opulent and fruity. It fills the mid-palate with plum, dark cherry and a velvety flow. Petit Verdot contributes to the complexity with intense color, floral accents and marked spice. Together they create a wine that expresses the full strength of the Argentinian Andes terroir. The harvest is carried out with great care, often in several passes. This way, only fully ripe, aromatic grapes make it to the cellar. In the early morning hours the freshness of the berries is better preserved. After arrival at the winery, a strict selection follows. Only ripe grapes go into the must. Fermentation on the skins takes place under temperature control in order to preserve fruit and freshness. Gentle extraction ensures ripe yet fine tannins. Regular punching down or pumping over of the must brings color, aroma and structure to the young wine. After fermentation, there is usually a further maceration period on the skins for additional depth. Subsequently, the wine rests in selected barrels. The targeted use of oak imparts notes of cedarwood, vanilla and fine roasted aromas. At the same time, the fruit remains in the foreground. Aging on the fine lees promotes richness and a soft mouthfeel. Through maturation in barrel, additional layers of complexity enter the wine, which later show impressively in the glass.
