The grapes grow under optimal conditions in the Coastal Region. Here, the vines sink their roots deep into soils of slate and sandstone. At optimal ripeness, the grapes for the Cabernet Sauvignon Swartland are harvested exclusively by hand, without the use of strenuous, less selective machinery. After harvesting, the grapes are quickly taken to the press house, where they are sorted and gently crushed. Fermentation then takes place in small wooden barrels at controlled temperatures. After fermentation is complete, the elegant Cabernet Sauvignon Swartland is aged for a further 18 months in oak barriques.
