The vines, which grow on clayey to calcareous soils, are cultivated using the traditional alberello pugliese method, which delivers optimal results, particularly for the local grape varieties. After the manual harvest in the second decade of September, the grapes are macerated and fermented at a controlled temperature, then gently pressed and the marc separated from the wine. The wine is matured in barriques for 6 to 8 months before being released for sale.
