Vinification of the Pfaffl Winery Chardonnay Exclusive The basis for the powerful Chardonnay Exklusiv from Lower Austria are grapes from the Chardonnay grape variety. The grapes grow under optimal conditions in Lower Austria. Here, the vines dig their roots deep into soils of clay and sand. After the grape harvest, the grapes are quickly taken to the press house. Here they are sorted and carefully broken up. Fermentation then takes place in stainless steel tanks and large wood at controlled temperatures. After the completion of fermentation, the Chardonnay Exclusive can continue to harmonize for a few months on the fine lees....
