The grapes grow under optimal conditions in Catalonia. Here, the vines sink their roots deep into slate soils. The ripening of the harvest for this wine made from Grenache Blanc, Pedro Ximénez and Viura is significantly influenced by the climate of the growing region. In Catalonia, the grapes thrive in a warm climate, which is reflected, among other things, in particularly well-ripened grapes and a relatively high must weight. When perfectly ripe, the grapes for Pedra De Guix Priorat Bio are harvested exclusively by hand, without the use of strenuous and barely selective mechanical harvesters. After the harvest, the grapes are quickly taken to the press house, where they are selected and gently crushed. Fermentation then takes place in large wooden casks at controlled temperatures. After fermentation is complete, the elegant Pedra De Guix Priorat Bio is matured for a few more months in oak barrels.
