Vinification of Terroir Al Limit Les Manyes Priorat The basis for the balanced Les Manyes Priorat from Spain is grapes from the Garnacha variety. The grapes grow under optimal conditions in Catalonia. Here, the vines sink their roots deep into clay soils. A significant influence on the ripeness of the harvest is also the fact that the Garnacha grapes thrive under the influence of a warm climate. This is expressed, among other things, in particularly well-ripened grapes and a rather high alcohol content in the wine. When perfect physiological ripeness is ensured, the grapes for Les Manyes Priorat are harvested exclusively by hand, without the use of rough, barely selective machines. After harvesting, the grapes are brought to the press house as quickly as possible. There they are sorted and gently crushed. Fermentation then takes place in large wooden vats at controlled temperatures. After fermentation is complete, the elegant Les Manyes Priorat is aged for a few more months in oak barrels.
