When the glass is held at a slight angle, a transition of the wine’s color towards garnet red can be seen at the rims of this barrel-aged wine. When the glass is swirled, this red wine reveals high viscosity, which shows in pronounced church windows on the glass. The nose of this red wine from Catalonia convinces with aromas of plum, damson, morello cherry and blueberry. Following the bouquet further, gingerbread spice, cocoa bean and dark chocolate join in, enhanced by the influence of oak. On the palate, the Salmos from Miguel Torres starts off wonderfully aromatic, fruit-driven and balanced. On the tongue, this powerful red wine is characterized by an incredibly velvety and dense texture. The finish of this matured red wine from the Catalonian wine-growing region, more precisely from Priorat DOQ, finally impresses with an exceptional length. The aftertaste is also accompanied by mineral facets from the soils dominated by volcanic rock. Vinification of Salmos by Miguel Torres The basis for the powerful Salmos from Catalonia is grapes from the Cariñena, Garnacha and Shiraz varieties. In Catalonia, the vines that produce the grapes for this wine grow on soils of volcanic rock. It is evident that Salmos is also shaped by the climate and winemaking style of Priorat DOQ. This Spaniard can literally be described as an Old World wine that presents itself with exceptional fragrance. Once perfect physiological ripeness is ensured, the grapes for Salmos are harvested exclusively by hand, without the help of coarse and not very selective mechanical harvesters. After the hand harvest, the grapes are brought to the winery as quickly as possible. There they are sorted and gently crushed. This is followed by fermentation in small wooden barrels at controlled temperatures. The vinification is followed by aging on the fine lees for several months before the wine is finally bottled. Food recommendation for Salmos by Miguel Torres This red wine from Spain should ideally be enjoyed tempered at 15 - 18°C. It is a perfect companion to fried calf’s liver with apples, onions and balsamic sauce, lamb ragout with chickpeas and dried figs, or lemon-chili chicken with bulgur.
