Here the vines drive their roots deep into limestone soils. After hand-picking, the grapes are quickly brought to the press house. There they are selected and gently crushed. Fermentation in stainless steel tanks at controlled temperatures follows. After vinification, the wine matures for several months on the fine lees before it is finally bottled. Maturation in oak barrels is followed by a long period of bottle ageing, which makes this white wine even more complex.
