Ravoire Caparaçon Châteauneuf-du-Pape AOC Rouge 0,75 ℓThe Olivier Ravoire Caparaçon is a red wine from the Maison Ravoire, which has been producing wines in both the Rhône Valley and Provence for generations, with 2 locations, one in Châteauneuf-du-Pape and one in Salon-de-Provence. With the Olivier Ravoire line, dedicated to Captain Ravoire who lived in the 16th century, the winery wanted to underline the ancient history of the family, while the name Caparaçon refers to an ornamental armor used in the Middle Ages. After the manual harvesting of the grapes, they undergo frequent pressing, pumping over, and long fermentation in thermo-regulated tanks. 100% of Mourvèdre and Syrah are aged in barrels (50% new oak, 50% a used oak), 10% of Grenache, the most concentrated, is aged in large barrels (600 l) new for 12 months. From the classic garnet red color, the nose reveals floral aromas and Mediterranean scrub, wild berries such as blackcurrant and raspberries. The sip is full and ample, with a long aromatic finish. Ideal in combination with dishes based on red meats and game, both stewed and roasted.
