Cavit Cum Vineis Sclavis Trentino DOC Schiava 0,75 ℓCavit's Cum Vineis Sclavis is produced on the vineyard hills in the foothill areas of the Valle dei Laghi, in Trentino. During the Middle Ages, farmers forced young vines around rigid supports to form orderly rows, hence the name of the practice Cum Vineis Sclavis or Slaughtered Vines , which gave rise to the name of the grape variety Schiava . Cavit wants to bring light to this native grape variety by retracing a centuries-old tradition. The carefully chosen grapes undergo fermentation at a controlled temperature, vinified in red with maceration on the skins for approximately 7 days. Subsequently the wine ages in stainless steel and concrete tanks on the fine lees, a method that preserves the distinctive fragrance and freshness of this grape variety. It has a brilliant ruby red color. A fragrant and fruity aroma emerges on the nose, dominated by notes of cherry and raspberry. On the palate it is dry, with a pleasant bitter undertone of almond and raspberry, which makes it an easy-drinking wine. This wine pairs beautifully with appetizers, medium-aged cheeses and cured meats, such as speck and pork coppa.
