It is made from Godello grapes sourced from a mosaic of plots located in the municipality of Córgomo, on the right bank of the Sil River, at about 350 meters of altitude. The schist slopes of this area impart structure and depth, creating a small universe of flavors between mountains and river.The winemaking begins with the manual selection of the bunches, followed by destemming, gentle pressing, and cooling to 10°C. After a cold maceration for 4-6 hours, fermentation occurs at 18°C in various containers: stainless steel, concrete eggs, French oak foudre, and acacia barrels. The wine then ages for eight months on the lees with weekly bâtonnage and subsequently matures in the bottle for at least 18 months, developing body and complexity.In appearance, it is golden with greenish reflections, bright and consistent. The nose is intense and complex, with notes of dried peach, white and yellow flowers, balsamic herbs, citrus, and pastry hints from the contact with fine lees. There are also clear mineral touches and a smoky nuance. The taste is powerful, vibrant, and rich, with a decisive structure, great balance, and a long, elegant finish.It pairs perfectly with sophisticated fish dishes, white meats, bloomy rind cheeses, or spicy dishes with Asian inspiration.
