Its name refers to the iconic vine shoot tied by hand around the neck of each bottle, a symbol of the connection between wine and territory. The grapes come from vineyards cultivated on medium-textured clay soils, in a natural setting that combines tradition and respect for the environment.The harvest, usually medium-late, is followed by gentle pressing and submerged cap maceration with fermentation at controlled temperatures.
