Martín Códax's Lías is an Albariño from the Rías Baixas, named after the aging on fine lees, a technique that enhances its complexity and elegance. It results from a careful selection of low-yield vineyards with good sun exposure, chosen to obtain grapes capable of developing a rich and distinctive aromatic profile. The harvest is manual, and the grapes are whole-cluster pressed with very gentle pressures to preserve the purity of the free-run juice.Fermentation takes place in stainless steel tanks at a controlled temperature. After fermentation, the wine stays in contact with the fine lees for a period of 6-7 months, followed by further aging in steel for about 12 months. This long process allows the wine to gain structure, volume, and aromatic complexity, while maintaining freshness and varietal typicity.In appearance, it is straw yellow, clean, and bright. On the nose, it reveals great aromatic intensity with notes of grapefruit, pear, quince, and creamy pastry undertones, combined with a fresh and saline finish. On the palate, it is full and voluminous, dense and silky, with a long fruity and savory sip that indicates great aging potential.It is ideal paired with fatty fish, white meats, risottos, and semi-aged cheeses.
