Vinification of the Pomerol from Château Gazin This balanced red wine from France is blended from the grape varieties Cabernet Franc, Cabernet Sauvignon and Merlot. In Bordeaux, the vines that produce the grapes for this wine grow on gravel soils. Naturally, the Pomerol is influenced by more than just the Pomerol soil. In the best sense of the word, this French wine can be described as an Old World wine that presents itself in an extraordinarily impressive manner. At the point of optimal ripeness, the grapes for the Pomerol are harvested exclusively by hand, without the use of strenuous and barely selective mechanical harvesters. After the harvest, the grapes are quickly taken to the press house. There they are selected and gently crushed. This is followed by fermentation in small wooden barrels at controlled temperatures. After fermentation, the wine is aged for several months on the fine lees before it is finally bottled.
