Alta Langa Cuvée Aurora Rosé Extra Brut is a refined Italian rosé sparkling wine produced by Banfi, a company among the founders of the Progetto Spumante Metodo Classico in Piedmont. It is made from Pinot Noir grapes grown in the marly-calcareous soils of Alta Langa, guaranteeing a quality that expresses the territory with great elegance and finesse. The winemaking process follows the Classic Method, with an initial fermentation at a controlled temperature in steel vats at 17°C and a second fermentation in the bottle. The wine rests on the lees for 30 months, developing complexity and a unique structure. The prolonged refinement allows for a fine and persistent perlage, a distinctive element of this sparkling wine. On the nose, intense hints of mandarin peel, rose and vanilla are perceived, which blend into an enveloping and delicate aromatic bouquet. On the palate, the marked sapidity and balanced acidity create a harmonious tasting experience, characterized by freshness and complexity.
