Ca' del Baio Barbaresco Asili Riserva

Drink it now or cellar for up to 25 years. It is recommended to decant it for at least an hour. Ca’ del Baio is a Piedmontese winery founded over a century ago by the Grasso family and located in the municipality of Treiso in the Langhe. The company owns over 30 hectares of vineyards from which it produces top-quality wines. The Nebbiolo grapes come from several micro-areas of the prestigious Asili cru, on a hill in the municipality of Barbaresco, where the Grasso family owns a significant portion of the vineyards. Here, the vines, planted between 1957 and 1999, are rooted in bluish calcareous-clayey marl and enjoy a southwestern exposure. The unique soil and climate conditions of this site ensure the production of wines of great character and longevity. After manual harvesting and fermentation in temperature-controlled wooden vats, the finished wine ages for 30 months in used tonneaux and for a further year in the bottle. In the glass, Barbaresco Asili Riserva reveals a brilliant garnet color. Its aromatic profile is broad and intense, with notes of rose petals and violets, red fruits, tar, and aromatic herbs intertwined with tertiary hints of spice. On the palate, it is mature yet lively, full-bodied and elegant, with firm, well-integrated tannins and a long, warm, and persistent finish. It is excellent with braised game, aged cheeses, and dark chocolate.
