Vincent Girardin Puligny-Montrachet Les Combettes 1er Cru
95/100 PP As I wrote shortly after it was bottled, the 2021 Puligny-Montrachet 1er Cru Les Combettes is one of the sites that Germain's team was able to thoroughly protect from the spring frosts (I remember driving past the parcel 10 days later, with it and Domaine Leflaive's vines standing out as the solitary island of green amidst a sea of desiccated buds), and the result is a wine that transcends the vintage. Offering up notes of waxy citrus rind, buttery pastry, iodine and white flowers, it's medium- to full-bodied, satiny and layered, with racy acids, chalky structuring extract and a long, saline finish. (William Kelley, robertparker.com) AGE OF THE VINE 55 years old GEOLOGY The vines are located in the Puligny Montrachet Village area, in the south of the Côte de Beaune. Les Combettes» plot is in the north of Puligny between Meursault village and Puligny Montrachet one. Soil : A clayey-limestone substratum, very stony, light brown soils and an orientation towards the East. The pruning is done in Guyot (Poussard) with different works during the green season. (Disbudding, trellising, topping). VINIFICATION Manual harvest, sorting on vine then in the vat and finally pressing (pneumatic press) to obtain a slow extraction. AGEING Barreling after a slight settling. The grapes are put in French oak barrels of 228 liters (15 % of new barrels) in which the alcoholic and malolactic fermentations in yeasts and native bacteria will take place. Breeding will be long on fine lees for 18 months. Without stirring. One month before bottling, the wine from different barrels is placed in a stainless steel tank for blending. Filling before gluing and light filtration before bottling. Bottling is done according to the lunar calendar. TASTING NOTE On the palate, this wine is full and rich from the start. The mid-palate is full with notes of apricot, peach, a light touch of citrus and a little exotic fruit. The acidity is present but well enveloped by the richness of the wine. FOOD PAIRING Fatty fish, turbot, Saint-Pierre, all cream sauces. Its complexity requieres a rich, greedy cuisine...
