Vinification of the Lugana DOC from Ottella 100% Turbiana grapes are vinified for this white wine. Turbiana is the old name for Trebbiano di Lugana, which has been widespread in the wine-growing region since ancient times. The vines thrive in the estate's best vineyards in San Benedetto di Lugana, which are characterized by a high proportion of white clay. The grapes are harvested exclusively by hand in the third decade of September. Most of the grapes are gently pressed, while a small part is gently destemmed and then pressed. This is followed by slow fermentation at controlled low temperatures, followed by ageing in stainless steel tanks on the fine lees for a period of 5 months.
