Codorníu Blanc de Blancs Ars Collecta Cava DO Reserva Brut 0,75 ℓ

The Ars Collecta Blanc de Blancs Reserva is a refined Cava DO produced with a careful selection of Chardonnay and Xarello and Parellada, whose vineyards are located in the Segrià and Penedès region. Winemaking begins with the night harvest of the grapes at the beginning of August to preserve the aromas, followed by delicate pressing. Fermentation takes place in small batches at 17°C, with a part of the must vinified in French oak barriques to enhance the blend. The ars Collecta Blanc de Blancs Reserva matures for 18 months at a constant temperature, ensured by the thick walls of our cellars. Visually, the wine appears clean and brilliant, of a warm yellow color with golden reflections and fine bubbles that form a persistent crown. On the nose, delicate notes of toasted bread, white pulp fruits such as peaches and nectarines are perceived, on a background of brioche and dried fruit, the result of long aging on the yeasts. On the palate it is broad, complex, balanced and creamy, with an elegance and richness of aromas that evolve over time. This Cava offers extraordinary versatility in food pairings: it excels with seafood, raw fish such as sashimi and sushi, lightly seasoned or smoked meats and various rice-based dishes. Also perfect with gourmet appetizers and fruit-based desserts.
