Vinification of Ettore by Tantini Giovanna The balanced Ettore from Italy is a blend, vinified from the grape varieties Cabernet Sauvignon, Corvina, and Merlot. The grapes grow under optimal conditions in Veneto. The vines root deeply into limestone soils here. When reaching optimal maturity, the grapes for Ettore are harvested exclusively by hand, avoiding coarse and less selective machines. Immediately after harvest, the grapes are taken into the press house, where they are carefully sorted and gently crushed. Subsequently, fermentation takes place in small wooden vessels at controlled temperatures. After fermentation, the elegant Ettore is matured for several months in oak barrels.
