Vinification of the Cariñena Nativa from Care Family Vineyards The basis for the powerful Cariñena Nativa from Aragón is grapes of the Carignan variety. The grapes grow under optimal conditions in Aragón. Here, the vines drive their roots deep into soils of limestone, slate, and gravel. The berries for this Spanish red wine are harvested exclusively by hand once they are perfectly ripe. After the hand harvest, the grapes are brought to the press house as quickly as possible. There they are selected and gently crushed. Fermentation then takes place in small oak barrels at controlled temperatures. After fermentation is complete, the Cariñena Nativa is aged for another 8 months in barriques made of oak.
