Steep slopes, terraced vineyards and sandstone walls shape the landscape. The soils consist mainly of weathered sandstone with a loess overlay. This combination ensures good water retention and fine minerality in the wine. The climate along the upper Elbe is rather cool, with warm days and fresh nights. These conditions produce aromatic, tension-filled grapes. The cuvée unites red and white grape varieties, as has remained traditional for Schieler. The white varieties contribute fragrant freshness and lively drive. The red varieties are responsible for colour, delicate tannins and the clear berry fruit. The harvest is selective, parcel by parcel. The timing is chosen so that the grapes develop ripe aromas but retain their freshness. Only fully ripe fruit makes it into the cellar. There, Weingut Hoflößnitz works with gentle processing to preserve the fine structure. First, the grapes are transported gently in small containers. The berries reach the press without much crushing. A short maceration time is enough to extract the delicate salmon pink colour and the fine berry notes from the skins. This is followed by gentle pressing with low pressure. In this way, the must remains clear and elegant. Fermentation takes place in temperature-controlled stainless steel tanks. Cool temperatures keep the aromas fresh and emphasize the clear fruit.
