Ripe yellow apple, Williams pear and lemon zest meet notes of peach and a touch of mirabelle. A lively, well-integrated acidity carries the aromas across the entire palate and lends freshness. Production of Aristargos 1.5l Magnum by David&Nadia The grapes come from selected vineyards in the Western Cape, partly with old vines and low yields. The climate offers warm days and cool nights, which allows for both aromatic density and freshness. The soils range from weathered granite and slate to sandy sites. This diversity creates depth, a clear acid structure and pronounced minerality in the wine. Chenin Blanc forms the core of the cuvée. Old vines deliver concentrated grapes with dense aromatics and pronounced acidity. Clairette is sourced from cooler parcels and emphasizes the citrus-driven profile. Roussanne grows mainly in warmer sites and shows spice, volume and fine honey accents there. Semillon comes from selected blocks with light, gravelly soils, which strengthens elegance and structure. Harvesting is carried out very precisely according to the ripeness of each parcel. Each variety reaches the cellar at its ideal moment. Picking in the early morning preserves freshness and aromatic intensity. Careful selection of the grapes ensures that only ripe, clean fruit finds its way into the cuvée. In the cellar, gentle handling follows, with soft pressing of whole clusters or destemmed berries, depending on the grape variety. A short maceration time enhances structure and aromas in some lots.
