Vinification of the Nosiola Le Frate by Pravis The basis for the well-balanced Nosiola Le Frate from Trentino-Alto Adige is grapes from the Nosiola variety. In Trentino-Alto Adige, the vines that produce the grapes for this wine grow on limestone soils. After harvesting, the grapes are quickly brought to the winery. There they are selected and gently crushed. This is followed by fermentation in stainless steel tanks at controlled temperatures. After fermentation, the wine matures for several months on the fine lees before it is finally racked. It is perfect as an accompanying wine to coconut-lime fish curry, fruity endive salad or vegetable salad with beetroot.
