In the glass, this wine glows a strong cherry red with ruby highlights. The multilayered bouquet enchants the nose with lush fruit aromas of juicy cherries, ripe currants complemented by spicy notes of cinnamon, caraway and licorice. This is joined by a subtle hint of roasted coffee and dark chocolate. On the palate, this French red wine presents itself with a round body, enveloped by a velvety texture and ripe tannins. The tannins are also noticeable in the pleasantly long finish. Vinification of the Les Jamelles Sélection Spéciale Cabernet Merlot The Merlot vines are rooted on the banks of the Aude River on stony soils - the Cabernet Sauvignon vines grow in Routier on more chalky soils. The Cabernet Sauvignon and Merlot grapes are harvested by hand. Once the harvest arrives at the Les Jamelles winery, the must is fermented at a controlled temperature in stainless steel tanks. This red wine undergoes malolactic fermentation. Once the fermentation process is complete, this wine rounds off harmoniously for 10 months in oak barrels. Finally, this red wine is bottled without filtration.
