Here, the vines dig their roots deep into limestone soils. After the grape harvest, the grapes are transported to the press house as quickly as possible. Here they are selected and carefully crushed. This is followed by fermentation in small oak barrels at controlled temperatures. Vinification is followed by 11 months of ageing in oak barriques.
