La Petite Sophie by Gitana Winery is a white wine created from a blend of Chardonnay, Riesling, and Feteasca Regala, cultivated in vineyards located 350 meters above sea level. The differentiation of soils and exposures allows enhancing the characteristics of each grape variety, highlighting the territorial identity and balance of the whole.The grapes are hand-picked, destemmed, and gently pressed. The must is cooled to 5°C using the cryomaceration technique to promote the extraction of varietal aromas. After six hours, alcoholic fermentation occurs in stainless steel at a controlled temperature between 12 and 14°C for 10-14 days. Feteasca Regala and Riesling are aged in steel with batonnage for 4 months, while the Chardonnay is aged for the same period in new barrels, on the lees.The color is golden with greenish reflections. The bouquet is complex, with notes of white fruit such as pear, accompanied by exotic hints of pineapple and peach and citrus nuances of candied peel. On the palate, it is savory and mineral, with an elegant and harmonious finish of vanilla and cream.Perfect with seafood risotto, grilled salmon, buttered lobster, and seared scallops.
