Justo is a red wine produced by Gerardo Cesari, made from Corvina and Merlot grapes grown on the varied soils of the Veneto region. This varietal combination gives the wine a balanced structure and a distinctive aromatic profile, typical of the modern interpretation of Venetian reds.The production process involves maceration on the skins for about fifteen days, followed by malolactic fermentation in steel tanks. Subsequently, the wine ages for a year, also in steel, thus preserving its freshness and vitality before bottling.In appearance, it shows a deep red color enriched by bright reflections. The olfactory bouquet opens with fresh notes of ripe fruit, especially cherry, while on the palate it stands out for its liveliness and freshness, with a velvety texture and harmonious structure that enhances its drinkability.Ideal paired with roast white meats or flavorful first courses.
