Fermentation takes place entirely in French oak barrels, with a proportion of new wood enhancing aromatic development. Ageing continues for about 11 months on fine lees, with occasional bâtonnage to encourage roundness and stability. This process creates a broad texture and persistent finish, while the profile remains clean and well-defined.Tasting notesIntense straw yellow colour with golden highlights. The nose reveals aromas of yellow-fleshed fruit, rhubarb, and subtle hints of sweet spices and toast.
